Curry Wasabi Nori Rolls

Filling Ingredients

  1. 1/4 head purple cabbage, finely chopped

  2. 1 bunch lacinato, chopped

  3. 2 carrots, grated or in long thin slices

  4. 1 small tomato, diced

  5. 1/2 head lettuce, chopped, optional

  6. 1 bunch cilantro, chopped

  7. 1/2 bunch parsley, chopped

  8. 2 thin slices purple onion, minced

  9. 1/2 cup pine nuts or walnuts

  10. a dash of ume plum vinegar, to taste

  11. raw dried nori sheets

  12. sprouts

Curry Wasabi Sauce

  1. 1 tsp. curry

  2. 1/2 tsp. coriander, freshly ground

  3. 1/2 tsp. turmeric

  4. 3 Tbl. tahini

  5. 1 lime, juiced

  6. wasabi, to taste

  7. water, enough to make thick sauce

  8. a dash of ume plum vinegar

Directions Toss all Filling ingredients in a bowl. Blend the Curry Wasabi Sauce and toss with the salad. Adjust flavors to suit your taste. Roll up the dressed salad with sprouts and carrots into nori sheets. Serve garnished with sprouts.
